Whole Chicken in the Slow Cooker

Ingredients:

  • 1 4-6 pound Organic Chicken

  • Seasoning (Be Creative)

Directions:

  1. Remove the giblet bag from the center of the chicken.

  2. Place chicken in the slow cooker.

  3. Season the chicken with your personal favorites but keep in mind the juices after 7 hours of cooking will make a great base for a chicken broth.

  4. Cook on low for 7 hours or until the chicken reaches a minimum of 165 degrees.

  5. Separate the meat from the bones and put all inedible parts back into the crock pot for the chicken broth recipe.

Seasoning Ideas: (Thyme, Parsley, Bay Leaves, and Peppercorns) ; (Garlic & Minced Onions) ; (Olive Oil, Green Onions with Thyme and Rosemary) ; (Salt & Pepper) ; (Paprika & Garlic)

Chicken Safety: Please check the USDA Food Safety website where you can see the exact internal temperature that should be reached and why they recommend not rinsing your chicken before cooking it.

Chicken Broth

Ingredients:

  • Chicken Carcass

  • 1 yellow onion, quartered

  • 4 celery stalks, chopped

  • 1 head of garlic, peeled

  • Salt and Pepper to taste

  • Water

Directions:

  1. Place the chicken carcass in the slow cooker.

  2. Add the onion, celery, garlic and salt and pepper.

  3. Fill the slow cooker with water in order to cover a majority of the chicken.

  4. Cook om low for 10 hours.

  5. Pour the contents of the slow cooker through a fine strainer.

  6. Store in air tight containers in the refrigerator for 3-5 days or freeze in individual servings for up to 3 months.
