M&M Chocolate Chip Pizza Cookie
The following recipe is adapted from a 2008 3rd grade school cook book. I have watched Eric's mother parade these masterpieces through the school for at least five years and I am always in awe by them. The chocolate chip pizza cookie has been on my "kitchen bucket list" ever since the first time I saw one. This week was the week I was able to cross it off my list.
You can decorate with different colored candies to suit any occasion. Stop by your local Dollar Tree and grab a pizza pan and a plastic wrap gift bag and you have a great gift.
M&M Chocolate Chip Pizza Cookie
Ingredients
2 1/2 cups of all-purpose flour
1/2 teaspoon of baking soda
1/2 tsp salt
2 sticks of room temperature unsalted butter
1 cup of light brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla
1 12oz bag of chocolate chips
1 small bag of M&Ms or other similar candy that you wish to decorate with.
Instructions
Preheat the oven to 300 degrees F.
Line a 12 inch round pizza pan with parchment paper.
Mix the first three ingredients in a bowl and set aside.
Cream butter and both sugars in a mixer.
Beat in eggs and the vanilla.
Mix in the flour mixture.
Fold in chocolate chips.
Place the batter onto the parchment paper and flatten into a pizza shape.
Leave an inch from the rim.
Decorate the top of the cookie cake with the M&Ms.
Bake on center rack for 30 minutes of until the cookie cake turns a golden brown around the edges.
