Renken Family Mac & Cheese

A lighter version of the old classic.

Renken Family Mac & Cheese


  • 1 16 oz package macaroni noodles, regular or whole wheat
  • 2 T butter
  • 2 T flour
  • 2 cups chicken or vegetable broth
  • 1 tsp dried mustard powder
  • 1 1/2 cup shredded cheddar cheese
  • 4 T bread crumbs


  1. Preheat oven to 375 degrees.  
  2. Boil macaroni for 6-8 minutes just short of recommended cook time on package.  
  3. Drain.
  4. Grease a 2 quart casserole dish with nonstick cooking spray. 
  5. Meanwhile, in a large saucepan, heat butter over medium heat.  
  6. Add flour to the butter.  
  7. Add broth and mustard and whisk thoroughly.  
  8. Simmer for a few minutes.  
  9. Reduce heat to low and add cheddar cheese to saucepan, stirring until it melts.  
  10. Add cooked macaroni and mix thoroughly.  
  11. Mix parmesan cheese and bread crumbs together in a small bowl.  
  12. Put macaroni mixture into casserole and sprinkle bread crumb topping over the mixture.  
  13. Bake, uncovered, for 25-30 minutes until it is lightly browned on the top.
