Paleo Stromboli Recipe

Cauliflower Stromboli

So a recent girls night at my friend, Sarah’s house, introduced me to the world of Paleo.  I had previously dabbled in a few recipes like this Spaghetti Squash but the taste of this Paleo Stromboli has made me a convert.

Paleo Stromboli Recipe

Ingredient:

Crust

  • 1 Head of Cauliflower, cut in small florets
  • 1 egg, lightly beaten
  • 1/2 cup of shredded mozzarella cheese, 1.7 oz.
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Filling:

  • 3 tablespoons spaghetti sauce
  • 1/2 cup mozzarella cheese
  • Any meat of your choice. (Ham, Pepperoni, Salami…)
  • Grated Parmesan Cheese to taste

Directions:

  1. Preheat the oven to 450 degrees.
  2. Line a baking sheet with parchment paper and lightly grease.
  3. In a food processor rice the cauliflower.
  4. Microwave 3 cups worth for 8 minutes on high.
  5. Place in a tea towel and wring out all of the moisture.
  6. Transfer to a mixing bowl, add egg, mozzarella, oregano, salt and pepper.  Mix well.
  7. Transfer to the parchment paper and form a large rectangle.
  8. Bake for 10 minutes.  Must be exact about the timing.
  9. Leaving two inch border spread out the sauce, 1/2 of the mozzarella, meat and then the rest of the cheese.
  10. Flip the long sides together and flip over to have the seem down.
  11. cut vent slats on top and sprinkle with parmesan and oregano.
  12. Bake for 12 more minutes.
  13. Rest for 2 minutes.
  14. May be served with extra sauce.
