Hunt Family Pumpkin Chocolate Chip Muffins

You know it is a good treat when everyone at school, parent and child alike, are talking about it.  Try this recipe and it is sure to be one of your Fall favorites.

1 cup of butter (2 sticks), melted

Pumpkin-Chocolate Muffins

 
2 cups white sugar
1 can of pumpkin puree (12 oz)
4 large eggs
2 teaspoons of vanilla
2 teaspoons of pumpkin pie spice
2 teaspoons of cinnamon
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
3 cups of flour
2 cups of mini chocolate chips
 
Cream butter and sugar. Add pumpkin. Add eggs one at a time. Add vanilla.
Mix dry ingredients. Add slowly to pumpkin mixture.
Gently add chocolate chips.Fill greased muffin tins (or use muffin papers) 2/3 full. Bake at 350 degrees for 20 – 25 minutes.
