Peanut Brittle Day

Peanut Brittle is my absolute favorite candy.  Hard to believe I could like anything more than chocolate, but I do.  When I was a child, I was in a group called “Blue Birds”.  It is very similar to the Girl Scouts but I personally believe the uniforms were cuter.  My first year in Blue Birds there was a candy drive and one of the top prizes was a sterling silver blue bird charm.  My mothers love of peanut brittle landed me the coveted charm that I still have today.  If she only knew how easy it is to whip up a pound of peanut brittle in under 10 minutes, I probably would of ended up with a Blue Bird pencil, instead of the charm that reminds me of a very sweet time of me life.  See’s Candy is my leading favorite store bought brittle but before you head to the store you might want to try this very easy, microwaveable recipe.  By the way, I ate shared two pounds worth today.  So happy we can move on to National Chocolate Cake Day tomorrow.  Let me know what you think of the following recipe.

Microwaveable Peanut Brittle

Ingredients:

  • 1 Cup of shelled peanuts
  • 1 Cup of Sugar
  • 1/2 Cup of Karo’s Light Corn Syrup
  • 1/8 teaspoon of Salt
  • 1 tbs. of Butter
  • 1 teaspoon of Vanilla
  • 1 teaspoon of Baking Soda

Directions:

  1. Place the first four ingredients in a 2 quart microwavable container.  Stir together.
  2. Place in a microwave for 4 minutes.
  3. Stir in the Butter and Vanilla.
  4. Microwave for an additional 2 minutes.  You are looking for a nice, medium light golden brown.
  5. Microwave times will vary.  Mixture will turn from done to burnt within seconds.<%
