Curran Family Artichoke Dip

Who doesn’t love a hot appetizer?  Artichoke Dip happens to be one of my favorites.  On a recent trip to Chez Curran we were greeted with this easy but incredibly yummy dip.  Not having a kitchen the last few months has really made us appreciate anything that is cooked in a home, and picking up this easy, delicious recipe makes us excited to cook in our new kitchen soon!

Ingredients:

  • 2 cans of artichokes
  • 1 cup of mayonnaise
  • 1 cup of parmesan cheese
  • 1 1/2 tsp. garlic powder
  • pinch of salt to taste
  • pinch of pepper to taste

Directions:

  1. Preheat oven to 350 degrees.
  2. Drain and chop the artichokes and place in a bowl.
  3. Add the mayonnaise, parmesan cheese, garlic powder, salt and pepper and stir.
  4. Place mixture in an oven safe dish and bake at 350 degrees for 35 minutes.
  5. A quick broil at the end will add to the presentation but not neccessary.
  6. Serve with sliced bread or crackers.
