Light Chocolate-Chunk Brownies

Light Chocolate-Chunk Brownies makes 16

Ingredients:

  • 2 tablespoons of vegetable oil plus more for the pan

  • 4 ounces bittersweet chocolate morsels

  • ¾ cup all-purpose flour

  • ½ cup unsweetened cocoa powder

  • ½ teaspoon of salt

  • ½ teaspoon baking soda

  • 1 cup packed dark-brown sugar

  • ½ cup unsweetened applesauce

  • ½ cup reduced-fat sour cream

  • 2 large eggs

Directions:

  1. Preheat the oven to 350 degrees

  2. Coat a 9 inch baking pan with oil and line with parchment paper with the ends hanging over the sides

  3. Coat the other side of parchment paper with oil.

  4. Microwave ½ of the chocolate, stirring every 30 seconds until melted

  5. In a separate bowl combine the flour, cocoa powder, salt and baking soda

  6. In a separate bowl whisk together brown sugar, applesauce, sour cream, eggs, oil and melted chocolate.

  7. Begin adding the flour mixture to the chocolate mixture

  8. Spread batter into prepared pan

  9. Sprinkle the remaining chocolate on top

  10. Bake for 30-35 minutes

  11. Let cool completely before cutting into individual servings

  12. May be stored in an airtight container for up to 3 days
